Mary, my Old Order Amish friend who lives outside of Sugarcreek, Ohio was the one who first introduced me to the 1-2-3-4 Amish Cake recipe during one of our visits. Someone had just shared it with her and she was enthusiastic about the results.
“It is so simple, Serena,” she said as she whipped the cake batter with a wooden spoon. “Just remember: 1 cup butter, 1 cup milk, 2 cups sugar, 3 cups self-rising flour, and 4 eggs. You memorize that and you can make it any time you want to without bothering to look at a recipe!”
Amish women are always looking for new recipes, and one that tastes good and streamlines the cooking process is always welcome. It has become one of my favorite go-to recipes and Mary’s right—you really don’t ever need a recipe for it. This simple cake, still hot from the oven, with some butter slathered on top qualifies as one of our family’s top comfort foods. When my husband’s doctor told him to go gluten-free, I had to tweak the recipe a little, but not much. It’s still quite easy….and very satisfying.
Another Amish neighbor, Deborah, has recently been sharing fresh milk from her Guernsey cow with us, and the cream that gathers on that milk is about two inches thick and very rich when I bring home a gallon. I skimmed it off this morning and made fresh whipped cream with crushed pineapple to make the cake look a little fancier for this picture then I added some local blackberries and chocolate drizzle. My youngest son—the guy who took the picture you see of me above—is now out on the front porch swing happily while eating the results!
1-2-3-4 Amish Cake
1 cup butter + 2 cups sugar (Blend until smooth)
Add 4 eggs
Add 1 tsp. vanilla
Alternate 3 cups of self-rising flour with 1 cup milk
Bake in 350 degree oven for about 40 minutes in a 9×13 cake pan.
Gluten-free alternative: Substitute three cups Gluten-free flour (plus 1 Tbs. baking powder and 1 tsp. salt
Serena Miller and her minister/carpenter husband live in the same southern Ohio farming community where they both grew up. Three grown sons, two daughters-in-law, and three grandchildren live nearby. She was delighted when an Amish settlement formed not far from her home, and she has enjoyed getting to know some of the families.
