Amish quilting has been around since the beginning of either the Amish or quilting. Most Amish quilts are not quilted in groups or quilting bees. Instead they are often a winter project for the girls/women of an individual family.
Sometimes when a community wants to gift a quilt to someone, for example to a teacher as a thank-you at the end of the school year, then there will often be a quilting bee to work on it.
