When my younger daughter, Shannon, was planning her wedding, she wanted to incorporate the flavors and beauty of Sarasota, Florida into the theme of her reception. Tropical colors and fragrant flowers adorned the tables and graced the landscaping. Key lime ice water and pineapple floats served at the reception made for refreshing treats that delighted their guests. For the rehearsal dinner, Yoder’s Restaurant – Shannon’s former employer – gifted the happy couple with their rendition of key lime pie. Mmm!
Don’t think you have to live in Florida to enjoy great key lime pie though. You can make one in your kitchen using this simple recipe by Laura Yoder, as featured in my book Simply Delicious Amish Cooking.
- 1/2 cup fresh lime juice
- 1 (14 oz.) can sweetened condensed milk
- 1 1/2 – 2 cups whipped topping
- 1 baked pastry pie crust
- additional whipped topping
Beat lime juice and sweetened milk together. Fold in whipped topping and pour into pie shell. Garnish with additional whipped topping. Refrigerate before serving.
