Country-living bakers, like me, tend to follow the seasons in deciding what to bake, and that means that if it’s spring, it’s rhubarb season! From the window where I’m sitting I can see the rhubarb patch, green leaves already unfurling despite the unseasonably cold spring we’ve been having so far. In another month, the first of the stalks will be ready to pull, and it will be time for rhubarb pie, rhubarb crisp, rhubarb cobbler, rhubarb rolls, and of course a cool dish of pinky-red rhubarb sauce.
The events of my latest book, The Rebel, take place in the spring in Pennsylvania, and there’s no doubt in my mind that rhubarb was the star of the dinner table several times. There is something so special about eating the very first thing the garden provides—it’s an assurance that despite the long winter, the growing season is upon us.
At this point, I’m still using up the rhubarb from the freezer that I put up last spring. I made a rhubarb pie for our Easter dinner, and I’ll soon be making another favorite, Rhubarb Crisp. I thought you might enjoy the recipe.
3 cups rhubarb, fresh or frozen, cut in 1-inch pieces
1 cup regular sugar
¼ cup flour
1 teaspoon cinnamon
Combine these ingredients and let sit while you make the crisp topping as follows:
Mix together ½ cup sugar and ¾ cup flour. Cut in 1/3 cup butter to fine crumbs.
Pour the rhubarb mixture into a buttered eight-or-nine inch pie plate or square glass pan. Top with crumb mixture. Bake at 375 degrees for 35 to 40 minutes, until the top is browned and the juices bubble up. Serve warm with whipped cream or ice cream. Enjoy!
