I am a strong believer in the notion that breakfast is the most important meal of the day (emphases on most). I was in search of a recipe to conjure up for my post and I just so happened to come upon this one in my inbox; baked oatmeal. It is super easy and simple. Double score! This recipe was sent to me by my local grocery store, Walnut Creek Cheese. I signed up for email alerts from them and they also have a bunch of equally yummy recipes on their website. I always say, one should never leave their chair without a smile and a satisfied tummy … baked oatmeal will get the job done.
Fall is looking to be a busy season with us running around quite a lot. With that, I know that I will for sure be using this recipe often. This is a “make ahead” dish so you can prepare it the night before and pop it into the oven in the morning. Try adding fruit for a topping or I like to drizzle honey on mine. Yum! Fill your belly and enjoy the fall colors. Oh, and when you push your chair in, what should you do? Smile. It’s your compliments to the chef…
- ½ c. butter, melted
- 1 c. brown sugar
- 2 eggs, beaten
- 3 c. oatmeal
- 2 tsp. baking powder
- ½ tsp. salt
- 1 tsp. cinnamon
- 1 c. milk
- ½ c. chocolate chips, optional
- Raisins, optional
- Mix butter, sugar, and eggs.
- Add oatmeal, baking powder, salt, and cinnamon.
- Stir in milk.
- Pour into a greased 7”x 11” pan.
- Sprinkle with chocolate chips or raisins.
- Refrigerate overnight. Bake at 350 degrees for 30 minutes.
